Step 1
Using kitchen twine, tie CUT OF MEAT in NUMBER places. Season generously with SEASONING and SEASONING.
Step 2
Over ADJECTIVE heat, coat bottom of a heavy skillet with olive LIQUID. Once pan is nearly VERB ING, sear SAME CUT OF MEAT until well- on all sides, including the ends, about NUMBER minutes per side (12 UNIT OF TIME total). Transfer to a NOUN. When ADJECTIVE enough to handle, snip off twine and coat all sides with CONDIMENT. Let cool in APPLIANCE.
Step 3
Heat oven to NUMBER°. Lightly VERB your work surface, then spread out ADJECTIVE pastry and roll it into a SHAPE that will cover the SAME CUT OF MEAT. Place on SAME ADJECTIVE pastry.

Once the log is fully covered, wrap roll in plastic wrap to get a really ADJECTIVE cylinder, then VERB for 20 minutes.
Step 5
Remove plastic wrap, then transfer roll to a NOUN-lined baking sheet. VERB with egg wash and sprinkle with ADJECTIVE salt.
Step 6
Bake until pastry is ADJECTIVE and the center registers NUMBER°F for medium-rare, about 40 to NUMBER minutes. Let rest 10 UNIT OF TIME before VERB ING and serving.
